Zucchini Bars

2 cups granulated sugar
1 cup oil
3 eggs
1 tsp vanilla            
2½ cups flour
1 tsp baking powder
2 teaspoons soda
1 tsp salt           
2 cups grated zucchini
¾ cup walnuts
¾ cup chopped dates

Cream sugar, oil, eggs, and vanilla. Add dry ingredients. Fold in grated zucchini; add nuts and chopped dates. Bake at 350° for 25-30 minutes.

Topping:
8oz. package cream cheese
1 tsp vanilla
2½ cups powdered sugar
milk

Alternate method:
3/4 cup sugar
1/2 coconut oil
1 egg plus 1/2 T of flaxseed and 1-1/2 T water
1/2 tsp vanilla
1 T flaxseed
1/2 cup oat flour
3/4 cup whole wheat flour
1 cup zucchini
<1/2 cup walnuts
<1/2 chopped dates
Use mixing and baking instructions above.
